This year, the Kansas Soybean Commission, encourages you to include delicious soy nuts in your holiday menu planning. Soy nuts are a great snack. They can be eaten plain or flavored for an easy party food to prepare ahead of time.

In addition to being a great party food, your health-conscious guests will appreciate the added soy protein. The Food and Drug Administration (FDA) recommends including 25 grams of soy protein each day. A one-cup serving of roasted soy nuts contains 12 grams of soy protein. That’s nearly half of the recommended daily requirement!

Soynut Butter Star Cookies are a delicious holiday food using soynut butter. Soynut butter is one of the many new soyfoods now available from grocery stores. Since FDA announced in 2000 that foods containing soy protein may reduce the risk of coronary heart disease, new soyfood products have exploded on the market. Soyfood sales have surged in popularity giving consumers a multitude of new foods to try.

Cinnamon Soynuts, Spicy Soynuts and Soynut Butter Star Cookies would also make great holiday food gifts. Pack in a festive container for a unique gift that can be enjoyed after the holidays.

CINNAMON SOYNUTS

1 egg white, slightly beaten

2 cups soynuts

1/3 cup sugar

2 teaspoons ground cinnamon

Mix egg white and soynuts in medium bowl until nuts are coated and sticky. Combine sugar and cinnamon; sprinkle over nuts and stir until thoroughly coated. Spread nuts in single layer in a greased jelly roll pan. Bake at 300 degrees about 30 minutes or until toasted. Store tightly covered.

SPICY SOYNUTS

2 teaspoons vegetable oil

1-1/2 teaspoons chili powder

1 teaspoon Worcestershire sauce

1/4 teaspoon ground red pepper

1/8 teaspoon garlic powder

2 cups soynuts

Heat oil in a 10-inch skillet over medium heat. Stir in seasonings. Ad soy nuts and cook about 2 minutes, stirring constantly, until soy nuts are evenly coated and hot. Store tightly covered.

SOYNUT BUTTER STAR COOKIES

3/4 cup soynut butter

1/2 cup vegetable shortening

1-1/4 cups firmly packed light brown sugar

3 tablespoons soymilk

1 tablespoon vanilla

1 egg

1/4 cup soy flour

1-1/2 cups all-purpose flour

3/4 teaspoon salt

3/4 teaspoon baking soda

48 chocolate star candies

Preheat oven to 375º F. Combine soynut butter, shortening, brown sugar, soymilk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg. Beat just until blended. Combine flours, salt and baking soda. Add to creamed mixture at low speed. Mix just until blended. Drop teaspoonfuls 2-inches apart on ungreased baking sheets. Flatten slightly by pressing chocolate candy in each cookie center. Bake for 7 to 9 minutes or until set and just beginning to brown. Do not over brown. Cool 1 minute on baking sheet. Remove cookies to wire rack to cool completely. Yield: 4 dozen cookies.
