Soybeans Are Iron Source For Women

It turns out that some soybean varieties may be helpful to women who are marginally iron deficient. Research assisted by USDA's Ag Research Service shows that ferritin in soybeans is a highly usable source of iron many women need.

The finding may represent a significant gain against iron deficiency, which afflicts 30% of the world's population. It could also refute the belief that iron in the form of ferritin in soybeans has poor bioavailability and thus is not readily absorbed into the body once ingested.
